Thumbs up Crock Pot Recipies

  How about sharing some of your favorites with the forum? We all like to camp and need to eat, but most of us don't stay close to the TM while on site. For those who like to boondock, a solar cooker can be used instead of a crock pot, but the recipies are the same.

Here's one of our favorites:

Sweet Potatoes & Pork

1-2 lb pork loin, cut in 1" cubes
2 med sweet potatoes, peeled and cut into 1" cubes
1/2 can coconut milk
1/3 cup jerk seasoning
1 individual sized can of peas
1 small onion, cut into chunks
1 tsp minced garlic
Reynolds crock pot liner or roast size roasting bag
1 gallon zip bag

After cutting meat into chunks, place in a zip bag with jerk seasoning, toss to coat and let set while you prepare the veges.

Prepare remaining vegetables, line crock, add onions and garlic. Add meat, coconut milk, 1/2 can water, potatoes then cover and set to cook on low for 6 hours. stir in peas and let heat through, about 20 min on high. Stir before serving.

1 lbs makes 3 svgs, 2 lbs makes 6, but add 2 more potatoes and the entire can of coconut milk.

OK...I know this is taking the easy way out...and we do like to cook from scratch...but one of our favorite crockpot recipes is actually the Banquet Beef Stew available in the frozen food section at Walmart for under $5!! It makes enough to serve the two of us...with leftovers...and it's sure easy on our budget!

Default Crockpot Chicken & Gravy

Lisa,
Great idea for a topic! And EmptyNest, I will have to try that Beef Stew.

Here is one of our all time favorite crockpot recipies. It is super easy and absolutely delicious!

4-5 Boneless Skinless Chicken Breasts ( frozen is fine)
2 cans Cream of Chicken Soup
1 can Cheddar Cheese Soup
1/4 tsp. garlic powder
Salt
Pepper

Egg noodles


Spray the interior of your crockpot with some non stick cooking spray.
In a separate bowl combine soups and garlic powder.
Place chicken ( frozen is ok) in the crockpot. Pour soup mixture over the chicken and add some salt & pepper to the top. ( to your taste)
Cover and cook on low 8 - 10 hours.
When cooking is complete and chicken is done ( it will be fall apart tender), cook egg noodles according to package directions. Drain.
Serve the chicken and sauce over the egg noodles.
This is one of our favorite recipies.

One of our favorites is the following:

Country Style Pork Strips
BBQ sauce
Sliced onion

Layer the strips, sauce and onion. Cook away!


Notice I don't put amounts of anything, because it's really according to taste. I usually cook 2 of the strips and use 1/2 to 1 whole onion (depending on size) and about a cup of BBQ sauce.

LOL! I'm sure that "banquet Beef Stew" would result in 100% Leftovers after being served in our TM. Maybe a good way to loose weight, though!

I make the same as Shunter only I add 1/2 a can of beer...

Also for all of the others, if you haven't already, be sure to use a "crock pot liner" they sell them by the foils and such. Like a big baggie for the pot and then when your are done, just tie it and toss it. then put your clean pot away. Could be the best advice my mother-in-law ever gave me...haha

Heres a joke on Reynolds--

Their crock pot liners are great but come 2 to the box. Their roasting bags are cheaper and come 3 to the box. The turkey size fits my largest crock just fine!
