Crock Pot Recipies
How about sharing some of your favorites with the forum? We all like to camp and need to eat, but most of us don't stay close to the TM while on site. For those who like to boondock, a solar cooker can be used instead of a crock pot, but the recipies are the same.
Here's one of our favorites:
Sweet Potatoes & Pork
1-2 lb pork loin, cut in 1" cubes
2 med sweet potatoes, peeled and cut into 1" cubes
1/2 can coconut milk
1/3 cup jerk seasoning
1 individual sized can of peas
1 small onion, cut into chunks
1 tsp minced garlic
Reynolds crock pot liner or roast size roasting bag
1 gallon zip bag
After cutting meat into chunks, place in a zip bag with jerk seasoning, toss to coat and let set while you prepare the veges.
Prepare remaining vegetables, line crock, add onions and garlic. Add meat, coconut milk, 1/2 can water, potatoes then cover and set to cook on low for 6 hours. stir in peas and let heat through, about 20 min on high. Stir before serving.
1 lbs makes 3 svgs, 2 lbs makes 6, but add 2 more potatoes and the entire can of coconut milk.
