Default Egg muffins

On a paper towel or plate lightly butter (spray type) an English muffin, nuke it about 20 sec. add a slice of cheese, folded to fit and set aside then in a small bowl (paper ok) add a little butter, fake eggs and Baco's, nuke for 1 min. mix and stir and nuke again for 50 sec. add egg to muffin.

In place of the Baco's use whatever sliced or pre cooked meat you have.

This is fast, almost no clean up, low fat (if you use fake cheese), and taste passable. It also has the added bonus of being eatable while on the road, trail or bike if on a realitively smooth trail.

Have you ever tried making the egg portion at home in bun rings? If you use a griddle or large flat frying pan you can make a few at a time. The bun rings are available through restaurant supply houses, or Wally world has a "mickey mouse head" shaped pancake ring that works well for use with biscuits. After making a few extra, keep them in the fridge. Nuke for about a minute each and place on a hot toasted muffin or bagel.
