We made this tonight. I guess it could be a one-day meal, if you already had the chicken stock.

Sometimes when we buy a Costco chicken I throw the leftover bird (after we take off the rest of the meat) into the crockpot to make chicken stock. If I have a leftover chicken, ham bone, etc., it often goes into the crockpot.

DH used the stock from today to make this hearty, tasty soup:

Fast Kielbasa Soup

1 lb. Kielbasa (or Smoked) Sausage, sliced thick
3 1/2 C chicken broth (or more)
1 (16 oz) can garbanzo beans
1 (16 oz) can kidney or red beans
1 to 2 cup chunks red or white potato (smaller potatoes taste best, we leave the skins on, I love the tri-colored. packaged ones from Trader Joe's)
3 c. shredded cabbage (red is good)
2 sliced carrots
1 Tbsp. white wine vinegar
1 tsp cilantro or parsley
1 tsp oregano
1/2 cup onions, diced
2 tsp cloves garlic, minced/crushed

In a 5 to 6 quart pan over high heat, bring broth, garbanzos, red beans, caggage, potatoes, carrots, onions and garlic to boil. Reduce heat; cover and simmer until potato and carrots are tender, 15 to 20 minutes. Add sausage, vinegar, cilantro or parsley and oregano and heat 10 minutes more. Serve in bowls and garnish with parsley/cilantro and Parmesan cheese. Hot sauce is also good (Tabsco).

Prep Time: 10 miniutes
Cook Time: 30 minutes

It could easily be adapted to sit in the crockpot for the rest of the cooking.

It tasted really good tonight and offered up a heavenly scent as it was cooking! Throw whatever is left in your vegetable bins in to make it even better.
