Be careful, you may never come back.
In my youth (45-50 years ago?) I met a retired couple in a little Shasta (?) trailer at some N.F. campground in Washington State. He said they lived in the Shasta year round, going from the Southern Rockies up to Alaska and back each year. Spent most of his time fishing.
I said to myself THAT'S what I want to do when I grow up.
Of course gas was a lot cheaper back then ...

If you are going to New Mexico, be sure to take a look at Las Vegas. It is an old fasioned town founded by the Spanish and then developed in the late 1800's by Americans. It has a couple of hundred buildings on the National Register of Historical Buildings. It is one hour north of Santa Fe. We like the place, and the area.

On the way out or the way back - Lincoln Parish Park: http://park.lincolnparish.org/
It's not back-country but it's a beautiful well maintained park. Has mountain biking trails and is about 3 miles north of I-20 at Ruston, Louisiana.

We haven't stopped at that one. Usually we stop at Lake Claiborne SP.
Further from I-20 but has wifi, bike/hike trails and boating. We will have to keep your suggestion in mind.

I am wondering if you thought I meant Las Vegas, Nevada? I was talking about Las Vegas, New Mexico. It is on I-25 one hour north of Santa Fe.
