As you suspect, the wall alongside the refrig isn't structurally very heavy. I have been on the back side of that wall to do a project involving the outlets, and as I recall it is a single piece of unsupported 1/16-inch or 3/32-inch lauan plywood. I had to cut a piece of 1/4" plywood and glue it to the inside of that wall, to beef it up some for my small project. If you do this, make the piece as big as possible, and bring the edges as close to the cabinet frame as possible. I don't have my TM available at the moment, but the possibility of hitting the TV with the refrig door doesn't sound appealling.
In my 2720SL, that location wouldn't work well because it is too low. I mounted my LCD TV on the side of the hanging cabinet, which is only a few inches farther away from the couch.

Don't know if this would work for you or not.
You should be able to get access to the space beside the refrig from outside the TM. Whether it is enough access is a different question.
